Adopt a Meal with Lisa Wilk

This Monday we were back for our regular programming for our Do Good Feel Good #AdoptAMeal program partnered with Foodie Tribe. Special Guest, Lisa Wilk also known as @TasteCookSip taught us an easy pumpkin chowder for the holiday season. Lisa calls this recipe delicious, nutritious and can be cooked for a Thanksgiving potluck or as leftovers delivered for family or friends due to current times. She also suggests using left-over veggies to cook the soup if you don’t have pumpkin puree or substituting it with squash puree.
Ingredients:
- 1 pie pumpkin, roasted and mashed OR 1 can pumpkin puree
- 1 medium sweet onion, diced
- 2 cloves garlic, smashed and minced
- 2 stalks celery, diced
- 5 carrots, peeled and sliced on the bias
- 1 cup potatoes, diced (we used multi-colored fingerling potatoes)
- 1 cup butternut squash, diced
- 32 oz vegetable broth or chicken broth
- 2-3 teaspoon yellow curry powder of choice
- ¼ teaspoon smoked paprika
- 1 ½ cup milk
- ½ cup heavy cream
- 2 tablespoon extra virgin olive oil
- 1 teaspoon sea salt, plus more to taste
- Fresh ground black pepper to taste
- Fresh cilantro, chopped, for garnish
- Pepitas or toasted pumpkin seeds
Instructions:
- Wash and prep vegetables. If using, roast pumpkin until soft and cooked through.
- In a stockpot over medium heat, saute diced onions in extra virgin olive oil until translucent. Add garlic and saute until softened but not browned. Add diced celery and sliced carrots to the pot. Cook until warmed through but do not brown.
- Add diced potatoes and diced butternut squash to the pot. Add vegetable broth and 1 teaspoon salt. Stir and cover the pot and simmer for 10-15 minutes until all vegetables are cooked through and potatoes and carrots are fork-tender.
- Add 2 tsp curry powder and ¼ tsp smoked paprika to soup and stir to incorporate. Turn off heat, add 1 ½ cup milk and ½ cup heavy cream, and stir until milk and cream are warmed through.
- Add ½ – 1 teaspoon of curry powder and salt and pepper to taste.
- Divide chowder into bowls. If desired, garnish with pepitas or toasted pumpkin seeds to serve.
This easy and healthy recipe can be served before, during or after a Thanksgiving meal.

For this segment of Story Hour #VolunteersWithAVoice, we had Author, Advice Columnist and Life Coach Susie Moore reading her very own children’s book, The Magic of Choice, My Powers Within.
Susie is not only a Best Selling Author, Entrepreneur and Life Coach, she has also been featured in over 300 media publications including Oprah.com, Marie Claire, Business Insider, Forbes, Refinery29, the Today show and Inc. Her story is also incredibly unique, having lived in shelters for parts of her life, she holds a special connection with the children and families from LLF’s Partner Facilities.
The Magic of Choice, My Powers Within is a children’s version of Susie’s adult Best Seller, Stop Checking Your Likes: Shake Off the Need for Approval and Live an Incredible Life. The book empowers children to turn their missteps and perceived failures into crucial stepping stones toward a truer, more confident self by helping even the littlest of readers understand that they always have a choice.

For the second #VolunteersWithAVoice Story Hour this week, we had musician and artist, J Young MDK! He read (and sang!) One Love by Cedella Marley.
We were so grateful to have J Young MDK, a multi-talented music artist, on our Story Hour this week! J Young MDK is a rapper, singer, songwriter, director and actor. During the quarantine period this year, he has started his 50/50 campaign. He’s set out to release 50 songs in 50 weeks, and he’s already released two albums already! Make sure to follow @JYoungMDK on social media platforms to hear all his new music as soon as it comes out!
J Young MDK read One Love by Cedella Marley. Adapted by his oldest daughter, this book takes the famous song “One Love” by Bob Marley and transforms it into a joyful story for a younger generation. For the #DGFG Live Fit Club workout of the week we had fashion model and fitness enthusiast, Priscilla Ricart lead us an energetic and fun workout anyone can take part in!
Priscilla Ricart is a fashion model working with Select Model Miami. She is someone who makes sure fitness is part of her daily routine in order to stay healthy and have positive energy throughout the day. In this week’s Fit Club Segment presented by LaCroix, she brought us through an exciting and upbeat workout and she made sure to keep you on your toes! Throughout her social media she shows her passion for fashion, modeling, and occasionally giving you helpful workout tips you can try at home! Priscilla’s positive energy and passion for helping others made her the perfect guest for this week’s Fit Club segment.
