A new week, a new recipe! On Monday’s #DGFGLive we had special guest and food blogger, Dianna Muscari with @theKitchenPrep for our #AdoptAMeal Program. She led us through her delicious Pumpkin Seed Chocolate Chunk Granola recipe. Before starting, she advised us to preheat the oven before creating the recipe as it will save time.
Dianna is a Miami native who migrated to Jupiter, Florida where she is now raising her family. She is a mother of a 5 year old boy and like many parents has adjusted to the new normal of schooling at home. She was also a teacher for 3 years in Texas before she found her passion for baking and cooking. One day it occurred to her to start a food blog and hasn’t turned back since.
You can check her out on @TheKitchenPrep and TheKitchenPrepBlog.com for more details.
Below you will find the ingredients and instructions it took to create this yummy recipe!
Ingredients:
- Rolled oats
- Pumpkin Pie Spice
- Salt
- Coconut oil
- Maple syrup
- Honey
- Canned Pumpkin Puree
- Vanilla extract
- Pumpkin Spiced Pumpkin Seeds
- Semi-sweet chocolate chunks or chips
Instructions:
- Use parchment paper or a silicone baking mat on your baking pan to avoid sticking.
- Stir the oats a few times while it’s baking to make sure it gets golden brown all over. This will also help avoid burning the edges.
- Check the mixture at 18-20 minutes to make sure it’s not over-browning — the mixture of honey & maple syrup makes it easy to scorch.
- The granola will not feel crunchy at the end of the bake time, but it will crisp up as it cools.
- Wait until the mixture is completely cooled before you add the chocolate chunks, otherwise they’ll melt.

Story Hour #VolunteersWithAVoice with NBC6’s Johnny Archer!

On one of this week’s segments of #VolunteersWithAVoice, NBC6 News Anchor Johnny Archer joined us for a reading of The Berenstain Bears: Kindness Counts by Jan Berenstain and Mike Berenstain.
LLF’s #VolunteersWithAVoice segments were created to share the message of kindness through children’s stories. We asked Johnny about his thoughts on the message of the book and he said, “You don’t have to be somebody famous, you don’t have to have a lot of money, and you don’t have to be someone on television to do good for others. That’s what’s so simple about giving back. Everybody can help others and give back.”
Johnny also gave us some insight into his journey to becoming a South Florida news anchor. He explains the importance of kindness and how the kindness of others helped get him where he is today!
You can keep up with Johnny on Instagram @Johnny.Archer. Tune in next week for readings by Loren Ridinger and Shareef Malnik!

On this week’s second #VolunteersWithAVoice Story Hour segment we had Steve Stowe, the VP/Executive Director, Miami HEAT Charitable Fund, Basketball Operations, reading Good People Everywhere by Lynea Gillen.
Our #VolunteersWithAVoice segments were created to share the message of friendship and kindness through reading children’s stories on our DGFG Lives. On this live show, Steve read a book about the importance of being a good person. It outlines all the good things that people are doing all across the world every single day. It is important to remember that good people are everywhere in your community, and you can do good every day in small ways! Steve believes if we can all do good things little by little, it’ll bring us all together especially during these difficult times. It all starts with teaching kids these lessons, which is why we love our Story Hour segments so much!
Thank you again to Steve for your support on this live! Make sure to tune in every Monday-Thursday at 3PM on @LLFoundation for more “Do Good, Feel Good” segments!
