This Monday’s Do Good Feel Good Live was kicked off with nothing better than our Adopt a Meal Program. Our special guest for the day was Chef Christianne Phillips making Veggie Loaded Turkey Balls of Fun. Mom of two twin boys, wife, Fitness Consultant, Private chef, Event Producer and more. Christianne decided to go to culinary school in New York to sharpen her skills and learn a lot more about the food industry. This would not have been possible without the support of her family so with the help of all of them she was able to explore the culinary world more in depth. She is a women with many talents that has no plans of slowing down, we had so much fun geting to cook and learn more about Christianne Phillips. Below is the recipe to her Veggie Loaded Turkey Balls of Fun.
Ingredients:
- 32 oz (two packages) pasture-raised ground turkey
- 1 large leek or 2 small ones, both white and pale green parts thinly sliced
- 3/4 cup of lightly sautéed shiitake mushrooms ( 5 oz raw)
- 1/2 cup (2 oz or 1/3 of a large) zucchini, shredded
- 1 teaspoon sea salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon oregano
- 3/4 to 1 cup finely ground almond flour
- Extra Virgin Olive Oil or Avocado Oil for pan-frying
- Makes 22 golf-sized meatballs
Directions:
- 1. Prep your veggies! Shred zucchini, lightly sauté mushrooms, and sliced leek.
- 2. I put all three vegetables in the food processor to ensure they are finely chopped. You can also do these knife skills 🙂
- 3. In a large bowl with your hands, combine all ingredients except almond flour and olive oil. Gently mix while adding the almond flour 1/4 cup at a time. The mixture will be sticky and that’s ok! Add only enough almond flour so that the mixture is sticky but can be formed into a ball.
- 4. At this point, I have a large bowl of water nearby, having wet hands is the ticket to forming a sticky mixture into nicely shaped balls!
- Form golf-sized balls from the turkey mixture, rubbing hands in water as needed to help w/ the stickiness.
- 5. Optional, but I put the balls in the fridge at this point for 30 minutes to help them keep their shape for frying.
- 6. Heat 1-2 tablespoon oil in a large cast-iron pan over med heat. Add the balls, careful not to crowd them together, and brown the balls on all sides (in batches). Remove to either a warm pot of red sauce or keep warm on a plate until ready to serve.
- Serve with your favorite sauce and (alternative) pasta. Garnish with chopped parsley or basil and parmesan cheese!

Story Hour #VolunteersWithAVoice with Tiffany Miranda

This Tuesday for our #VolunteersWithAVoice Story Hour we had Tiffany Miranda, Founder and President of Girls Make Beats. She read Tu Es Belle: You are Beautiful By Stichiz.
Tiffany “Delilah” Miranda is an accomplished DJ, producer, engineer, singer and founder of the nonprofit organization, Girls Make Beats. The Miami native started as a recording artist at age 15, appearing on shows like American Idol and X-Factor. After facing many challenges in a male dominated industry, Tiffany found a sense of creative control by learning about the music production and audio engineering fields.
Building her own home studio to interning at various major studios in Miami, she quickly noticed there were not a lot of women in these fields nor was there a sense of support for women trying to break into these positions. Despite often being the “only woman in the room”, she landed an in-house engineer position and obtained her Avid certification. She then helmed her skills to become one of the most sought after recording engineers and producers in the industry working with heavy hitters Lil Uzi Vert, French Montana, TI, Rick Ross, DJ Khaled, Fat Joe and much more.
In efforts to position girls at the forefront of music technology, Tiffany founded Girls Make Beats (GMB) in 2012. The organization empowers young girls to become music producers, DJs and audio engineers. She has forged partnerships with industry titans like Apple, Spotify, Facebook as well as various major record labels to create unparalleled opportunities for the girls in the program. This includes an official remix for Janet Jackson and spearheading programs to engage the girls with music industry professionals such as Janelle Monae, Chloe x Halle, Tinashe and Eve. The work she is doing with GMB has been featured on Billboard, Grammy.com, Good Morning America and more.
Tiffany Miranda read Tu Es Belle: You are Beautiful By Stichiz. This book talks about Abby and her struggle with others dimming her light and making her feel insecure. From her hair to her skin color, Abby finds it hard to see her true beauty. However, with the help of Gifted Nate, all of that changes.
Thank you again to Tiffany Miranda for sharing this wonderful story and supporting #VolunteersWithAVoice!
