Another Monday, another delicious recipe brought to you by Do Good Feel Good Live (“DGFG Live”). One of our most famous volunteer programs is Adopt a Meal which inspired this segment. Pre-quarantine life allowed us to go to McDonald House Charities and provide meals to the families staying at the center due to medical reasons.
Monday’s segment had the one and only First Lady of LLF, Missy Babicka aka @BeautyBodyBaby. Missy, took over with a delicious Mediterranean Zucchini Boat recipe that had us all drooling 2 minutes into the segment.
Take a look below for recipe, instructions, and a tasty dish that will make you feel like you’re in a mediterranean dream!
Ingredients:
- 6 Zucchinis (varies depending on how many people you are serving)
- Mushroom
- Shredded chicken (optional)
- Cauliflower rice
- Goat cheese crumbles
- Olives
- Tomatoes
- Olive oil
- Salt and pepper
Instructions:
- Cut zucchini in half
- Scoop out the inside
- Drizzle some olive oil
- Roast the boats in the oven – 15 mins (350F)
- Mix all your ingredients in your bowl including the zucchini insides
- Remove boats from oven to add your filling
- Place filled boats back in the oven for 10 minutes at the same temperature
- Voila! Enjoy some fresh zucchini boats!

On this week’s segment of #VolunteersWithAVoice, our friend and NBC6 Anchor Jawan Strader, joined us for a reading of Brown Bear, Brown Bear, What Do You See? by Bill Martin, Jr.
LLF’s #VolunteersWithAVoice segments were created to share the message of kindness. When asked about the initiative, Jawan said, “Children’s books like these can go a long way especially right now with what we’re going through. There’s so much negativity in the world we need more positivity.”
Jawan also answered some fun, rapid fire questions, discussing his journey as an Emmy Award winning newscaster, providing some encouraging words to youth and more!
LLF’s #VolunteersWithAVoice segments support LLF’s Back to School initiative, which is to get school supplies to 1500 underserved children in need from LLF’s Partner Facilities, including Fienberg Fisher K-8, Excel Kids Academy, Brent Wright Leadership Academy, Carrfour and Motivational Edge. A fan favorite, Amanda Ferreira, joined us for a Mindful Hour about Mindful Eating. Amanda is a certified health coach and fitness expert. Amanda is a bodybuilder and has worked on her routine for years. In fact, she gave us a great workout. Click here to watch that Fit Club Segment. Amanda gave some great advice about eating healthy! Watch the full segment above, but for now here are the main points!
How to keep your kids away from unhealthy snacks:
We need to trick our minds: We can always go for the easy unhealthy snacks. A quick solution is to have convenient healthy snacks ready to go. For example, have fruit ready and washed and in a convenient place for the kids to reach. They eat with their eyes first, so make sure the food is fun and aesthetically pleasing. Be prepared to have your kids snack. Once you are prepared, healthy snacking is easy. Take the bad and easy stuff out of reach. Treats are okay but set aside far from sight.
Even though Amanda is in great shape, she has struggled with food for years. In her youth she struggled with overeating and hormone imbalances. Eating should be a “nurture experience”, make time to eat and enjoy it. Set a time for your meals instead of snacking mindlessly. You have to pay attention. Set a routine, at least for your meals. Get your food, sit at the table, and disconnect from your phone. Don’t eat outside of that time set. Also, pace yourself. Let your brain send your body signals that you are full. You’re supposed to eat when you have natural sunlight and stop eating when no sunlight (that is your window)
Is there a benefit not eating late?
When you eat late you trigger whole digestive system to work, requires energy (2-6 hours to finish process) when you go to sleep your body shuts down to enter rest and recover phase
- Hinder digestion, not properly digest or stored as fat
- Disturb your sleep
Intermediate fasting! When you fast you give rest to your gut, working all the time, it needs time to rest, like muscles. At least 12 hours, the gut it resets. Have to be connected to your body when you fast.
Food needs to be a good thing and you can make it that way.

Fit Club Presented by LaCroix with Taylor Walker

Fresh-faced and ready to dive in, the talented Taylor Walker led our star Marketing and Events Coordinator Amanda and her partner Matthew through a zoo animal-inspired workout fit for adults and children alike. Taylor is a trainer, Barry’s Bootcamp Aventura fitness instructor, wellness blogger at TaylorWalkerFit.com, and mother to one “crazy toddler.” This Fit Club session consists of a total of ten simple moves, and some animal noises suggested for the kids! But do not be fooled, you will surely feel that burn.
Taylor’s animal-style moves include:
- The Inchworm
- Downward Dog
- Dolphin
- Frogger
- Bird Tick
- Stork/Flamingo
- Frogger Jump
- Scorpion Pushup
- Gorilla Hops
- Donkey Kicks
Making it halfway through this workout necessitates a water break, and our favorite way to hydrate at The Little Lighthouse is with LaCroix Sparkling Water. Taylor made sure to give a shout out to the LaCroix key lime flavor, a household favorite!
