Adopt a Meal is a program that is very close to our hearts here at The Little Lighthouse Foundation (“LLF”). We are able to visit the Ronald McDonald House Charities and provide meals for the families that are staying there due to medical reasons. Therefore, when we choose a DGFG Live guest for this program we don’t take it lightly. This leads me to introduce you to Katy Coffield.
Katy is a woman of many hats, almost like that character Sarah Jessica Parker played in “I don’t know how she does it”. She is a mom of 2, CEO and Founder of FoodieTribe.com and the latest DGFG Live Adopt a Meal guest.
As a Miami native, Katy fell in love with all things blogging as she attended the University of Miami where she founded @FoodieTribe, an influencer agency dedicated to connecting “foodie” bloggers with the hottest restaurants for a collaboration made in culinary heaven.
For our segment, Katy brought out her famous Cuban dish “Picadillo” and taught us how to make it like she usually does. Let’s just say, we are big fans of this dish! Take a look below for ingredients, instructions and some cooking inspiration.
Ingredients:
Ground beef
Garlic
Cumin
Oregano
Tomato Sauce
Salt to Taste
Instructions:
- Put ground beef in a pan
- Mix in Garlic, Cumin, Oregano, and Salt to taste
- Once the beef has been cooking for about 7-10 minutes pour in the tomato sauce
- Cook until the meat is fully cooked and the liquid is mostly gone.
- Enjoy!

On this week’s segment of #VolunteersWithAVoice, we had the incredible Louis Aguirre of Local 10 News join us for a reading of The Giving Tree by Shel Silverstein! Louis gave us a heartfelt and, at moments, emotional reading of the classic followed by a reflection on the book and its meaning as well as some rapid fire questions!
“This book is really about the power of love, how love is always available to us no matter what. No matter what path we choose in life, no matter how far we stray, we can always go back and find love. Love will always be there to give us whatever we need to sustain ourselves. Love always has our backs. Love will always pick us up. Love will always give us a place to rest and stay safe and will give us everything that we need,” said Louis about his interpretation of the book.
Louis also gave us an inside look at how he found his passion for journalism and a little bit about his journey along the way!

According to Maya, whenever you are feeling stressed out or overwhelmed, take a moment to give yourself a hug. Sure, this may seem weird at first but your brain does not register the touch is from you. Your brain thinks the hug is coming from another person. In a time where touch is limited a hug, even from yourself, can be a day changer.

Ready to burn off all those calories from the week? Asha Walker gave us a killer full body workout. Walker is not a pro at working out or a trainer, but her at home workout sure works up a sweat. Before we feel the burn, lets learn a little more about this fitness enthusiast.
Asha Walker runs an organization called Health in the Hood. The organization works to build vegetable gardens in food deserts around South Florida and to provide food education. Click here to learn more.
