Originally from Israel, Sally Schimko grew up around Mediterranean cooking and always loved healthy eating. Through her passion for clean foods she created My Sexy Veggies, a brand devoted to showing others that vegetables are not only great for you but could also be delicious.
We collaborated with Sally for our Adopt A Meal segment of DGFG Live and she taught our audience how to make a delicious Edamame Hummus dip. This is a dish that she grew up loving but the traditionally used chickpeas didn’t sit well in her system. This led her to this tasty and fun Edamame version. If you weren’t able to watch the live segment, no worries we got you covered! The recipe is as follows:
Ingredients:
- 2 Cups of Edamame Beans (Peeled and Cooked)
- 1/2 Cup of Pesto Tahini (click here to purchase)
- 1 Lemon
- Salt to taste
- (Optional) 1 tbs of olive oil to top it all off
Instructions:
- Combine all ingredients in a food processor until all condiments are fully mixed.
- The mixture should look thick yet spreadable.
- Taste and adjust as needed. Enjoy!
